Healthy Crockpot Baked Beans

(Vegan & No Refined Sugar)

Serves: 8–10

Prep Time: 15 minutes

Cook Time: 6–8 hours (slow cooker)


Ingredients:

  • 3 cups cooked navy beans (or 2 cans, drained & rinsed)
  • 1 medium onion, finely chopped
  • 3 cloves garlic, minced
  • 1 medium apple, grated (adds natural sweetness)
  • 1/4 cup tomato paste
  • 1/4 cup apple cider vinegar
  • 1/4 cup pure maple syrup (or use 2 tbsp if reducing sweetness)
  • 2 tbsp Dijon mustard
  • 1 tbsp smoked paprika
  • 1 tsp ground cumin
  • 1/2 tsp black pepper
  • 1/2 tsp salt (adjust to taste)
  • 2 cups low-sodium vegetable broth or water
  • 1 tbsp olive oil (optional for richness)

Optional Add-Ins:

  • 1/2 cup chopped bell pepper (for color and nutrients)
  • 1 tbsp molasses (for deep flavor, use in place of part of maple syrup)
  • 1–2 tbsp chopped fresh herbs (like parsley or thyme, stirred in at end)

Instructions:

  1. Sauté (optional but boosts flavor):

    In a skillet, heat olive oil and sauté onion, garlic, and grated apple for 5 minutes until soft.
  2. Mix:

    In the crockpot, combine beans, sautéed mix, tomato paste, vinegar, maple syrup, mustard, spices, and broth. Stir well.
  3. Cook:

    Cover and cook on low for 6–8 hours, or high for 3–4 hours, stirring once or twice if possible.
  4. Finish:

    If too liquidy at the end, remove lid for last 30–45 minutes on high to thicken.
  5. Taste and adjust:

    Add salt, pepper, or a splash more vinegar if you want more tang.

Tips:

  • Use dry beans (soaked & cooked beforehand) for best texture and control over sodium.
  • Leftovers freeze well!
  • Serve with grilled veggies, corn on the cob, and a green salad for a full healthy BBQ spread.
